- 2 cups mixed dried fruit
- 1 cup self-raising flour
- 1 cup soda or sparkling water
Instructions
- Preheat your oven to 160°C (320°F).
- In a mixing bowl, combine the mixed dried fruit with the flour.
- Gradually add the soda or sparkling water and mix until the batter is smooth.
- Pour the mixture into a greased cake pan.
- Bake in the preheated oven for about 30-35 minutes or until a toothpick comes out clean.
- Let the cake cool before serving.
Notes
Serve plain, dusted with icing sugar, or with whipped cream or ice cream. Store in an airtight container for up to a week.
