- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons sugar
- 4 (8-ounce) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 4 cups apples, peeled and sliced
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
- ½ cup brown sugar
- 1 cup all-purpose flour
- ½ cup oats
- ½ cup brown sugar
- ½ cup butter, cold and cubed
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press this mixture into the bottom of a springform pan to form the crust.
- In a large bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition. Pour the cream cheese mixture over the crust.
- In another bowl, combine the sliced apples, lemon juice, cinnamon, and brown sugar. Spread this apple mixture over the cheesecake layer.
- For the streusel topping, mix flour, oats, brown sugar, and cold butter until crumbly. Sprinkle this mixture on top of the apples.
- Bake for about 60 minutes or until the center is set.
- Cool the cheesecake and refrigerate for at least 240 minutes before serving.
Notes
Serve chilled with whipped cream or vanilla ice cream. It can be covered and stored in the refrigerator for 3 to 5 days.
