- 690 g cream cheese (softened)
- 75 g granulated sugar
- 100 g Greek yogurt
- 2 teaspoons vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 3 large eggs (room temperature)
Instructions
- Preheat oven to 180°C (350°F).
- Crush Lotus biscoff cookies in a food processor.
- Mix cookie crumbs with melted butter and press into a 9-inch springform pan.
- Bake crust for 10 minutes, then cool.
- Combine melted butter, flour, brown sugar, and oats for the crumble topping.
- Toss sliced apples with brown sugar, cinnamon, and cornstarch.
- Beat cream cheese and sugar until smooth; add yogurt, vanilla, and spices; mix well.
- Add eggs one at a time, mixing gently.
- Pour cheesecake mixture over crust, then layer apples on top.
- Sprinkle crumble topping over apples and bake for 50-60 minutes.
- Allow to cool and refrigerate for at least 4 hours before serving.
