Ingredients

  • 150 g unsalted butter (melted)
  • 55 g unsalted butter (melted)
  • 50 g all-purpose flour
  • 50 g brown sugar
  • 20 g rolled oats
  • 3 tart apples (peeled, cored, sliced)
  • 50 g brown sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 690 g cream cheese (softened)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 3 large eggs (room temperature)

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Crush Lotus biscoff cookies in a food processor.
  3. Mix cookie crumbs with melted butter and press into a 9-inch springform pan.
  4. Bake crust for 10 minutes, then cool.
  5. Combine melted butter, flour, brown sugar, and oats for the crumble topping.
  6. Toss sliced apples with brown sugar, cinnamon, and cornstarch.
  7. Beat cream cheese and sugar until smooth; add yogurt, vanilla, and spices; mix well.
  8. Add eggs one at a time, mixing gently.
  9. Pour cheesecake mixture over crust, then layer apples on top.
  10. Sprinkle crumble topping over apples and bake for 50-60 minutes.
  11. Allow to cool and refrigerate for at least 4 hours before serving.
