Description

Delightful cupcakes filled with spiced apple filling and topped with creamy cinnamon cream cheese frosting, perfect for gatherings or cozy treats.


Ingredients

  • 4 small tart apples (peeled, cored, and finely diced)
  • 30 g brown sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon ground cinnamon
  • 50 g water
  • 185 g cake flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 115 g unsalted butter (softened to room temperature)
  • 200 g granulated sugar
  • 3 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 150 g milk (dairy or non-dairy)
  • 60 g unsalted butter (softened to room temperature)
  • 125 g cream cheese (softened to room temperature)
  • 75 g powdered sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium saucepan, combine the diced apples, brown sugar, cornstarch, ground cinnamon, and water. Cook over medium heat until the apples soften. Set aside to cool.
  2. Preheat your oven to 180°C (350°F) and line a cupcake tin with paper liners.
  3. In a bowl, mix together the cake flour, baking powder, cinnamon, and salt.
  4. In a separate bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, then add vanilla extract.
  5. Gradually mix in the dry ingredients and milk until well combined.
  6. Fill each cupcake liner halfway with batter. Add a spoonful of the cooled apple filling on top of the batter, then cover it with more batter until the liners are about two-thirds full.
  7. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow cooling completely on a wire rack.
  8. In a mixing bowl, beat together the softened butter and cream cheese until smooth. Gradually add powdered sugar, cinnamon, and vanilla extract, beating until creamy and fluffy.
  9. Once the cupcakes are cool, frost them generously with the cinnamon cream cheese frosting.

Notes

Store the cupcakes in an airtight container in the fridge for up to a week or freeze without frosting for longer storage.
