Ingredients

- 2 pounds Yukon gold potatoes
- 1 white or yellow onion
- 4 tablespoons butter
- 1/4 cup all-purpose flour (or gluten-free 1:1 flour)
- 2 cups unsweetened almond milk (or regular milk)
- 2 cups cheddar cheese, shredded
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup Gruyere cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 tablespoons parsley, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the Yukon gold potatoes and onion thinly.
- In a saucepan, melt butter over medium heat.
- Add flour and whisk until smooth.
- Slowly add almond milk while whisking to prevent lumps.
- Stir in garlic powder, salt, black pepper, cheddar cheese, Gruyere cheese, and Parmesan cheese until melted.
- Layer half of the potatoes and onions in a greased baking dish. Pour half of the cheese sauce over the top.
- Repeat layering with the remaining potatoes, onions, and cheese sauce.
- Cover with foil and bake for 60 minutes.
- Remove foil and bake for an additional 30 minutes until golden and bubbly.
- Garnish with chopped parsley and serve warm.
Notes
Use a mandoline slicer for even slicing and feel free to mix cheeses for different flavors.
