Description

A creamy and cheesy comfort food dish, perfect for family gatherings and holidays.


Ingredients

  • 2 pounds Yukon gold potatoes
  • 1 white or yellow onion
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour (or gluten-free 1:1 flour)
  • 2 cups unsweetened almond milk (or regular milk)
  • 2 cups cheddar cheese, shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup Gruyere cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the Yukon gold potatoes and onion thinly.
  3. In a saucepan, melt butter over medium heat.
  4. Add flour and whisk until smooth.
  5. Slowly add almond milk while whisking to prevent lumps.
  6. Stir in garlic powder, salt, black pepper, cheddar cheese, Gruyere cheese, and Parmesan cheese until melted.
  7. Layer half of the potatoes and onions in a greased baking dish. Pour half of the cheese sauce over the top.
  8. Repeat layering with the remaining potatoes, onions, and cheese sauce.
  9. Cover with foil and bake for 60 minutes.
  10. Remove foil and bake for an additional 30 minutes until golden and bubbly.
  11. Garnish with chopped parsley and serve warm.

Notes

Use a mandoline slicer for even slicing and feel free to mix cheeses for different flavors.
