Description

Ingredients

  • 100g pancetta
  • 2 large egg yolks
  • 50g grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Cook the spaghetti in a large pot of salted boiling water according to package instructions.
  2. While the pasta cooks, heat a pan over medium heat and add the pancetta, cooking until crispy.
  3. In a bowl, whisk together the egg yolks and Parmesan cheese.
  4. Drain the spaghetti, reserving some pasta water, and add it to the pan with the pancetta.
  5. Remove from heat and quickly mix in the egg and cheese mixture, adding reserved pasta water as needed to create a creamy sauce.
  6. Season with salt and black pepper.
  7. Serve immediately, garnished with fresh parsley if desired.
