Instructions
- Cook the spaghetti in a large pot of salted boiling water according to package instructions.
- While the pasta cooks, heat a pan over medium heat and add the pancetta, cooking until crispy.
- In a bowl, whisk together the egg yolks and Parmesan cheese.
- Drain the spaghetti, reserving some pasta water, and add it to the pan with the pancetta.
- Remove from heat and quickly mix in the egg and cheese mixture, adding reserved pasta water as needed to create a creamy sauce.
- Season with salt and black pepper.
- Serve immediately, garnished with fresh parsley if desired.
