- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup canned pumpkin puree
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 2 tsp pumpkin pie spice
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup brown sugar
- 1/4 cup cold butter, cubed
- 1/2 cup powdered sugar
- 1–2 tbsp milk
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
- In a large bowl, combine flour, granulated sugar, pumpkin pie spice, baking soda, and salt. Whisk until well combined.
- Add the pumpkin puree, vegetable oil, eggs, and vanilla extract to the dry mixture. Stir until well combined; the batter will be thick.
- In a separate bowl, mix together the brown sugar and remaining flour. Cut in the cold butter cubes until crumbly.
- Pour the batter into the prepared cake pan and sprinkle the crumble mixture evenly over the top. Bake for 30-35 minutes or until a toothpick comes out clean.
- Let the cake cool slightly in the pan. Whisk together powdered sugar and milk for glaze. Drizzle over the warm cake.
- Let it cool completely before slicing and serving.
Notes
For added texture, consider adding nuts or chocolate chips. Store in an airtight container for best freshness.
