Ingredients

  • 1 ripe avocado
  • 2 eggs
  • Salt to taste
  • Pepper to taste
  • Optional: red pepper flakes, lemon juice

Instructions

  1. Toast the bread slices until golden brown.
  2. In a bowl, mash the avocado with a fork, adding salt, pepper, and lemon juice if desired.
  3. In a non-stick skillet, scramble the eggs over medium heat until they’re cooked to your liking.
  4. Spread the mashed avocado on the toasted bread.
  5. Top with scrambled eggs and sprinkle with red pepper flakes if desired.
  6. Serve immediately.

Notes

Best enjoyed fresh but scrambled eggs can be stored for 1-2 days. Use whole grain or sourdough bread for added flavor.
