Description

A delicious frittata combining crispy bacon, tender potatoes, and fluffy eggs, perfect for breakfast or brunch.


Ingredients

  • 8 large eggs
  • 6 strips bacon (chopped)
  • 2 medium potatoes (diced)
  • 1/2 cup heavy cream
  • 1/4 cup fresh chives (chopped)
  • 1/2 cup cheddar cheese (grated)
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F.
  2. In a skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
  3. Add the diced potatoes to the same skillet and cook until golden brown and tender.
  4. In a separate bowl, whisk together eggs and heavy cream, seasoning with salt and pepper.
  5. Pour the egg mixture over the cooked potatoes in the skillet and gently stir to combine.
  6. Sprinkle crispy bacon and grated cheese on top.
  7. Cook the frittata on the stovetop for about 3 minutes to set the bottom.
  8. Transfer the skillet to the oven and bake for 15-20 minutes until the frittata is fully set and golden on top.
  9. Garnish with fresh chives before serving.

Notes

Use a non-stick skillet for easy removal. Let the frittata rest before serving for easier slicing.
