- 8 large eggs
- 6 strips bacon (chopped)
- 2 medium potatoes (diced)
- 1/2 cup heavy cream
- 1/4 cup fresh chives (chopped)
- 1/2 cup cheddar cheese (grated)
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F.
- In a skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
- Add the diced potatoes to the same skillet and cook until golden brown and tender.
- In a separate bowl, whisk together eggs and heavy cream, seasoning with salt and pepper.
- Pour the egg mixture over the cooked potatoes in the skillet and gently stir to combine.
- Sprinkle crispy bacon and grated cheese on top.
- Cook the frittata on the stovetop for about 3 minutes to set the bottom.
- Transfer the skillet to the oven and bake for 15-20 minutes until the frittata is fully set and golden on top.
- Garnish with fresh chives before serving.
Notes
Use a non-stick skillet for easy removal. Let the frittata rest before serving for easier slicing.
