- 1 box brownie mix plus required eggs, oil, and water as indicated on the box
- ¼ cup Baileys Irish Cream (optional)
- ½ cup salted butter, softened
- 2½ cups powdered sugar, sifted
- 1 teaspoon vanilla extract
- 2 tablespoons Baileys Irish Cream
- 3 to 4 tablespoons heavy whipping cream
- 1 cup semi-sweet chocolate chips
- ⅓ cup heavy whipping cream
- 2 tablespoons Baileys Irish Cream
Instructions
- Preheat your oven according to the brownie mix package instructions. Line an 8×8 inch baking pan with parchment paper and set it aside.
- Prepare the brownies as directed on the package, adding ¼ cup of Baileys Irish Cream for extra flavor. Pour the batter into the prepared pan and bake according to package instructions. Once baked, remove and let cool completely.
- In a mixing bowl, beat softened butter, vanilla extract, and sifted powdered sugar until combined. Gradually add 2 tablespoons of Baileys Irish Cream and heavy cream until fluffy and smooth.
- Spread the buttercream over the cooled brownies using an offset spatula and chill in the freezer.
- In a microwave-safe bowl, combine ⅓ cup heavy whipping cream with 2 tablespoons of Baileys Irish Cream. Heat until simmering, then pour over chocolate chips and let sit for 3 to 4 minutes. Stir until smooth.
- Spread the ganache over the buttercream layer and let it set for 45-60 minutes.
- Lift the brownies from the pan using parchment paper, cut into squares, and serve immediately.
Notes
Serve warm or chilled with vanilla ice cream or coffee. Store in an airtight container at room temperature for up to three days, or refrigerate for up to a week.
