A delightful dessert capturing the essence of autumn with layers of caramelized apples, creamy mascarpone, and crunchy ladyfingers.
Ingredients

- 4 large apples (e.g., Boskop or Elstar)
- 100 g sugar
- 50 g butter
- 1 tsp cinnamon
- A pinch of nutmeg
- 200 ml apple juice
- 200 g heavy cream
- 250 g mascarpone cheese
- 100 g natural yogurt
- 1 tsp vanilla extract
- 200 g ladyfingers
- 50 g chopped walnuts or almonds (optional)
- Fresh mint for decoration (optional)
Instructions
- Thoroughly wash, peel, and core the apples, then cut them into small cubes.
- Melt the butter in a large pan over medium heat.
- Add the sugar and stir until it caramelizes to a golden brown.
- Introduce the apple cubes to the pan, mixing well with the caramel.
- Sprinkle in the cinnamon and nutmeg, combining all ingredients.
- Pour the apple juice into the pan and bring to a boil. Lower heat and simmer apples for 10–15 minutes until tender but not falling apart.
- Remove from heat and cool the apples.
- In a large bowl, whip the heavy cream until stiff peaks form.
- In another bowl, combine the mascarpone, yogurt, and vanilla extract until smooth.
- Gently fold the whipped cream into the mascarpone mixture.
- Prepare a large glass bowl or individual serving glasses for layering.
- Layer ladyfingers, optionally soaked in apple juice, followed by caramelized apples, then mascarpone cream. Repeat layers, finishing with mascarpone cream on top.
- Sprinkle walnuts or almonds on top if desired.
- Chill in the refrigerator for at least 120 minutes before serving, garnished with fresh mint.
