Description

A delightful dessert capturing the essence of autumn with layers of caramelized apples, creamy mascarpone, and crunchy ladyfingers.


Ingredients

  • 4 large apples (e.g., Boskop or Elstar)
  • 100 g sugar
  • 50 g butter
  • 1 tsp cinnamon
  • A pinch of nutmeg
  • 200 ml apple juice
  • 200 g heavy cream
  • 250 g mascarpone cheese
  • 100 g natural yogurt
  • 1 tsp vanilla extract
  • 200 g ladyfingers
  • 50 g chopped walnuts or almonds (optional)
  • Fresh mint for decoration (optional)

Instructions

  1. Thoroughly wash, peel, and core the apples, then cut them into small cubes.
  2. Melt the butter in a large pan over medium heat.
  3. Add the sugar and stir until it caramelizes to a golden brown.
  4. Introduce the apple cubes to the pan, mixing well with the caramel.
  5. Sprinkle in the cinnamon and nutmeg, combining all ingredients.
  6. Pour the apple juice into the pan and bring to a boil. Lower heat and simmer apples for 10–15 minutes until tender but not falling apart.
  7. Remove from heat and cool the apples.
  8. In a large bowl, whip the heavy cream until stiff peaks form.
  9. In another bowl, combine the mascarpone, yogurt, and vanilla extract until smooth.
  10. Gently fold the whipped cream into the mascarpone mixture.
  11. Prepare a large glass bowl or individual serving glasses for layering.
  12. Layer ladyfingers, optionally soaked in apple juice, followed by caramelized apples, then mascarpone cream. Repeat layers, finishing with mascarpone cream on top.
  13. Sprinkle walnuts or almonds on top if desired.
  14. Chill in the refrigerator for at least 120 minutes before serving, garnished with fresh mint.
