  • 1 tablespoon Ginger (grated)
  • 1 can Coconut Milk (full-fat preferred)
  • 3 tablespoons Lemon Juice (freshly squeezed)
  • 1 teaspoon Lemon Zest

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the cod fillets with salt and pepper on both sides.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and sauté until translucent, about 5 minutes.
