- 4 Eggs
- 2 Tomatoes, diced
- 150g Fresh spinach

- Salt, to taste
- Pepper, to taste
- 1 tsp Oregano
Instructions
- Preheat the oven to 375°F (190°C).
- In a baking dish, arrange the diced tomatoes and fresh spinach.
- Crumble the feta cheese on top.
- Drizzle with olive oil and season with salt, pepper, and oregano.
- Make small wells in the mixture and crack an egg into each well.
- Bake in the oven for 20-25 minutes or until the eggs are cooked to your liking.
- Serve warm.
