Description

Crispy and savory chicken bites coated in a sweet honey BBQ sauce, perfect for appetizers or family dinners.


Ingredients

  • 2 pounds (907g) boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 cup (125g) all-purpose flour (spooned & leveled)
  • 5 cups (140g) corn flakes cereal, crushed lightly
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 2 large eggs
  • 1/4 cup (60ml) milk
  • 3/4 cup (222g) your favorite BBQ sauce
  • 1/4 cup (85g) honey
  • 1/4 cup (68g) ketchup

Instructions

  1. Preheat the oven to 400°F (204°C) and line two large baking sheets with parchment paper or silicone baking mats. Set aside.
  2. Place bite-sized pieces of chicken in a large bowl. Add the flour and stir to coat each piece thoroughly. Set aside.
  3. In another large bowl, combine the crushed corn flakes, salt, pepper, garlic powder, and smoked paprika. Set aside for later use.
  4. In a small bowl, whisk together the eggs and milk until well combined.
  5. Dip each piece of chicken in the egg mixture, allowing excess to drip off, and then roll in the cornflake mixture. Shake off any excess before placing on the prepared baking sheets.
  6. Bake for 18 minutes, flipping each piece halfway through for even cooking.
  7. In a small saucepan over medium heat, combine the BBQ sauce, honey, and ketchup. Cook for about 5 minutes, whisking occasionally until well mixed and heated through.
  8. Once the chicken bites are done baking, remove them from the oven and let cool for about 5 minutes. Pour the sauce over the warm chicken bites and gently stir to coat.
  9. Serve the chicken bites warm and enjoy!
