- 1 clove garlic (minced, fresh preferred)

- 2 cups cooked rice (white, brown, or cauliflower rice)
- 1 cup shredded carrots
- 1 cup cucumber (julienned)
- 1 cup edamame (shelled)
- 1/4 cup green onions (sliced)
- 1/4 cup cilantro (chopped)
- 1 tablespoon sesame seeds
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
- Season the chicken breasts with salt and pepper and drizzle them with olive oil.
- Bake the chicken for about 20-25 minutes, or until the internal temperature reaches 165°F.
- Let the chicken rest for 5 minutes before dicing it into bite-sized pieces.
- Prepare the bang bang sauce by whisking together the mayonnaise, sweet chili sauce, sriracha, honey, minced garlic, and lime juice in a bowl. Taste the sauce and adjust the spice level according to your preference.
- Combine the diced chicken with half of the bang bang sauce to coat it well in a large mixing bowl.
- Divide the cooked rice evenly among serving bowls.
- Top each bowl of rice with the coated chicken, shredded carrots, cucumber, edamame, green onions, and cilantro.
- Drizzle each bowl with the remaining bang bang sauce and sprinkle with sesame seeds for an added crunch.
