Description

BBQ chicken tacos are a delightful combination of smoky chicken, fresh vegetables, and customizable toppings, perfect for family dinners or casual gatherings.


Ingredients

  • 1 1/2 pounds chicken thighs
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil
  • 1/2 cup BBQ sauce
  • 3 cups shredded cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 1/4 cup cilantro, chopped
  • 8 corn tortillas
  • 1 cup shredded cheddar cheese
  • 1 small-medium avocado, diced
  • 1/4 cup diced red onion
  • 1/4 cup cilantro, roughly chopped
  • Optional toppings: lime juice, sliced jalapeños

Instructions

  1. Make your spice mixture by mixing garlic powder, smoked paprika, chili powder, onion powder, cumin, salt, and pepper in a small bowl.
  2. Season chicken thighs with the spice mixture. In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chicken and cook for 10 minutes. Flip the chicken and continue cooking for an additional 5-10 minutes or until fully cooked through. Shred the chicken using two forks and return it to the pan with BBQ sauce, warming through.
  3. Combine cabbage, carrots, yogurt, vinegar, cilantro, salt, and pepper to make coleslaw in a medium bowl. Toss until well mixed, adjusting seasonings to taste.
  4. Warm the tortillas over a gas stove or in a skillet for 15-30 seconds on each side. Keep the tortillas warm by wrapping them in a kitchen towel.
  5. Assemble the tacos by filling each tortilla with shredded cabbage, shredded chicken, cheese, avocado, red onion, and cilantro.
  6. Top with additional toppings as desired and serve.

Notes

For added flavor, marinate the chicken in the spice mixture and BBQ sauce for a few hours or overnight. Opt for quality chicken thighs for the best texture.
