  • 2 pounds chicken wings (wingettes and drummettes)
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper, coarsely ground
  • 3/4 cup barbecue sauce
  • 1 tablespoon chopped chives or green onions (optional)

Instructions

  1. Prepare the oven and baking sheet: Adjust the oven rack to the middle position and preheat your oven to 450°F (232°C). Line a large baking sheet with aluminum foil for easy cleanup.
  2. Oil the wire rack: Grease both sides of a wire rack with vegetable oil using a paper towel or spray with cooking spray. Place the greased rack inside the baking sheet.
  3. Dry the chicken wings: Place chicken wings on paper towels and pat them dry with additional paper towels.
  4. Coat the chicken: In a large bowl, whisk together baking powder, salt, and black pepper. Add chicken wings and mix until evenly coated.
  5. Arrange and bake: Place wings evenly on the wire rack and bake for 20 minutes. Flip wings and bake for an additional 10-15 minutes until golden brown and crispy (internal temperature reaches 165°F/74°C).

  7. Return the coated wings to the reserved baking sheet and bake for an additional 5 minutes for a crispy coating.
