- 2 pounds beef chuck, cut into 1-inch cubes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 medium head of cabbage, chopped
- 3 carrots, sliced
- 2 potatoes, diced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add beef and brown on all sides.
- Stir in onions and garlic; cook until onions are translucent.
- Add beef broth, carrots, potatoes, tomato paste, Worcestershire sauce, thyme, paprika, salt, and pepper.
- Bring to a boil, then reduce heat to low. Cover and simmer for about 90 to 120 minutes, or until beef is tender.
- Stir in chopped cabbage and cook for an additional 20 minutes.
- Adjust seasoning as needed before serving.
