Deliciously tender beef short ribs cooked in a flavorful sauce using a slow cooker.

- 3 to 4 lbs beef short ribs
- 1 tablespoon olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine or additional beef broth
- 1 tablespoon tomato paste
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Sear the short ribs: In a large skillet over medium-high heat, add the olive oil. Season the short ribs with salt and pepper, and sear them in the skillet until browned on all sides.
- Sauté the aromatics: In the same skillet, add diced onions and garlic. Cook until the onions are soft and translucent, about 3-4 minutes.
- Prepare the slow cooker: Transfer the browned short ribs to the crockpot. Then, pour the sautéed onions and garlic over the ribs.
- Mix the sauce: In a bowl, combine the beef broth, red wine, tomato paste, smoked paprika, and thyme. Stir well to incorporate all the flavors.
- Add to the crockpot: Pour the sauce mixture over the short ribs in the slow cooker, ensuring the ribs are mostly submerged.
- Cook: Cover the crockpot and cook on low for 480 minutes (8 hours) or on high for 240-300 minutes (4-5 hours).
- Serve: Once cooked, garnish with chopped parsley and serve warm.
Notes
Searing the ribs enhances flavor. For best results, use low-sodium beef broth and don’t skip the cooking time on low.
