Ingredients

  • Extra virgin olive oil
  • Kosher salt, to taste

  • ½ cup BBQ sauce

Instructions

  1. Prepare your grill for direct cooking at high heat (around 450 degrees F). Clean the cooking grates with a grill brush.
  2. Drizzle the chicken breasts with extra virgin olive oil and rub it all over the meat.
  3. Season the chicken generously with kosher salt and freshly ground black pepper.
  4. Place the chicken on the hot grill. Cover and cook for 5-6 minutes or until they easily release from the grill grates.
  5. Flip the chicken and continue to grill for another 4-5 minutes.
  6. Baste the chicken with BBQ sauce, flip, and cook for an additional 2 minutes on each side.
  7. Ensure that the chicken is firm and registers an internal temperature of 160 degrees F.
  8. Remove from the grill and let the chicken rest for 5 minutes before slicing and serving.
  9. Preheat your oven to 450 degrees F if cooking in the oven.
  10. Drizzle each chicken breast with olive oil and season generously with kosher salt and black pepper.
  11. Place the chicken on a lined baking sheet for oven cooking.
  12. Bake for 15 minutes, then brush with BBQ sauce and cook for an additional 5-8 minutes until the sauce bubbles and the internal temperature reaches 160 degrees F.
  13. Remove from the oven, let rest for a few minutes, and serve.
