Description

A comforting and hearty One-Pot Lasagna Soup that brings the classic flavors of lasagna without the hassle of baking. Ideal for busy weeknights.


Ingredients

  • 1 pound ground beef or turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 8 ounces uncooked lasagna noodles, broken into pieces
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups chopped fresh spinach
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions

  1. In a large pot, over medium heat, brown the ground beef or turkey, breaking it apart as it cooks, about 5–7 minutes. Drain any excess fat.
  2. Add the chopped onion and garlic to the pot and sauté until the onion is translucent, about 3–4 minutes.
  3. Stir in the crushed tomatoes, broth, broken lasagna noodles, Italian seasoning, salt, and pepper. Bring to a boil.
  4. Reduce the heat to a simmer and cover. Cook for about 15 minutes or until the noodles are tender.
  5. Add the chopped spinach and stir until wilted, about 2 minutes.
  6. Stir in the ricotta cheese until well combined and creamy.
  7. Ladle the soup into bowls and top with shredded mozzarella and grated Parmesan. Garnish with fresh basil if desired.

Notes

For a thicker soup, reduce the amount of broth. You can substitute ricotta with cottage cheese or Greek yogurt if needed.
