- 1 pound ground beef or turkey
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 8 ounces uncooked lasagna noodles, broken into pieces
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 cups chopped fresh spinach
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- Fresh basil for garnish (optional)
Instructions
- In a large pot, over medium heat, brown the ground beef or turkey, breaking it apart as it cooks, about 5–7 minutes. Drain any excess fat.
- Add the chopped onion and garlic to the pot and sauté until the onion is translucent, about 3–4 minutes.
- Stir in the crushed tomatoes, broth, broken lasagna noodles, Italian seasoning, salt, and pepper. Bring to a boil.
- Reduce the heat to a simmer and cover. Cook for about 15 minutes or until the noodles are tender.
- Add the chopped spinach and stir until wilted, about 2 minutes.
- Stir in the ricotta cheese until well combined and creamy.
- Ladle the soup into bowls and top with shredded mozzarella and grated Parmesan. Garnish with fresh basil if desired.
Notes
For a thicker soup, reduce the amount of broth. You can substitute ricotta with cottage cheese or Greek yogurt if needed.
