- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- 1 cup spinach
- 1 cup Parmesan cheese, grated
- 1 tablespoon Italian seasoning
- Fresh basil for garnish
Instructions
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat the olive oil over medium heat.
- Add the chicken and cook until browned on both sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute.
- Pour in the chicken broth and bring to a simmer.
- Stir in the heavy cream, sun-dried tomatoes, spinach, Parmesan cheese, and Italian seasoning.
- Return the chicken to the skillet and let it simmer in the sauce for about 10 minutes, or until the chicken is cooked through.
- Garnish with fresh basil and serve warm. Enjoy!
