Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/2 cup sprinkles
Instructions
- Preheat the oven to 350°F (175°C) and line a mini muffin tin with paper liners.
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, cream together the softened butter and sugar until light and fluffy.
- Add in the eggs, one at a time, then stir in vanilla extract.
- Alternate adding the dry ingredients and milk to the butter mixture, starting and ending with the dry ingredients.
- Gently fold in sprinkles.
- Fill the mini muffin tins about 2/3 full with batter and bake for 10-12 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
For variations, consider adding chocolate chips, lemon zest, or coconut to the mix. Store in an airtight container for up to 3 days, or freeze for up to 2 months.
