Description

Delightful mini muffins bursting with flavor and color, perfect for any occasion.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/2 cup sprinkles

Instructions

  1. Preheat the oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add in the eggs, one at a time, then stir in vanilla extract.
  5. Alternate adding the dry ingredients and milk to the butter mixture, starting and ending with the dry ingredients.
  6. Gently fold in sprinkles.
  7. Fill the mini muffin tins about 2/3 full with batter and bake for 10-12 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

For variations, consider adding chocolate chips, lemon zest, or coconut to the mix. Store in an airtight container for up to 3 days, or freeze for up to 2 months.
