Description

Delightful Biscoff blondies combine buttery flavor with the rich, spiced taste of Biscoff cookie butter. Perfect for sweet snacks or with coffee.


Ingredients

  • 1 cup unsalted butter
  • 1 cup Biscoff cookie butter
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup white chocolate chips
  • 1/2 cup crushed Biscoff cookies

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a 9×9-inch square baking pan with parchment paper.
  2. In a medium saucepan, melt together the unsalted butter and Biscoff cookie butter over low heat, stirring until smooth.
  3. Remove from heat and allow to cool for about 5 minutes.
  4. Add brown sugar to the butter mixture and whisk until smooth.
  5. Incorporate eggs one at a time, whisking well after each addition.
  6. Mix in the vanilla extract until combined.
  7. In a separate bowl, sift together flour, baking powder, and salt.
  8. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  9. Fold in white chocolate chips and crushed Biscoff cookies.
  10. Pour batter into the prepared pan and spread evenly. Bake for 25 to 30 minutes, or until a toothpick comes out clean.
  11. Cool in the pan for 10 minutes, then remove and cool completely on a wire rack. Cut into squares and serve.

Notes

Don’t overmix the batter and let the blondies cool completely before cutting for best results.
