- 1 cup unsalted butter
- 1 cup Biscoff cookie butter
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup white chocolate chips
- 1/2 cup crushed Biscoff cookies
Instructions
- Preheat your oven to 350°F (175°C). Grease or line a 9×9-inch square baking pan with parchment paper.
- In a medium saucepan, melt together the unsalted butter and Biscoff cookie butter over low heat, stirring until smooth.
- Remove from heat and allow to cool for about 5 minutes.
- Add brown sugar to the butter mixture and whisk until smooth.
- Incorporate eggs one at a time, whisking well after each addition.
- Mix in the vanilla extract until combined.
- In a separate bowl, sift together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
- Fold in white chocolate chips and crushed Biscoff cookies.
- Pour batter into the prepared pan and spread evenly. Bake for 25 to 30 minutes, or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then remove and cool completely on a wire rack. Cut into squares and serve.
Notes
Don’t overmix the batter and let the blondies cool completely before cutting for best results.
