Description

Ingredients

  • 2 large-sized bitter melon (bitter gourd)
  • 2 tomatoes
  • 2 onions
  • 1/4 cup drinking water
  • 1/2 cup vinegar
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 1 tbsp sugar
  • Anchovies (Dilis) to taste
  • Oil for frying

Instructions

  1. Prepare the Vegetables: Slice the tomatoes and onions into thin pieces. In a pan, fry the anchovies in a little oil until crispy.
  2. Make the Sauce: Combine the water, vinegar, pepper, salt, and sugar in a bowl and set aside.
  3. Prepare the Bitter Melon: Cut the bitter melon in half, remove seeds, and slice thinly. Squeeze the slices to soften and rinse under cold water.
  4. Combine the Ingredients: Toss the bitter melon, tomatoes, and onions together. Drizzle the sauce over and mix well.
  5. Serve and Enjoy: Plate the salad and top with crispy anchovies. Store leftovers in the fridge for up to 2 days.

Notes

For best flavor, let the salad chill for at least 30 minutes before serving. Adjust the bitterness of the melon by soaking it in salt water if desired.
