Description

A hearty and flavorful dish that combines protein-packed sausage with wholesome black beans and rice, perfect for weeknight dinners and gatherings.


Ingredients

  • 1 cup rice
  • 2 cans black beans, drained and rinsed
  • 1 pound sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, brown the sausage over medium heat.
  2. Add the chopped onion and garlic, cooking until soft.
  3. Stir in the rice, black beans, chicken broth, cumin, and smoked paprika.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is tender and liquid is absorbed.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with cilantro.

Notes

Rinse the beans to reduce sodium. Feel free to add herbs or spices to customize the flavor.
