Description

Ingredients

  • Sweet Potatoes: 2 large (about 2 cups mashed)
  • Granulated Sugar: 1 cup
  • Brown Sugar: 1/2 cup
  • Evaporated Milk: 1/2 cup
  • Unsalted Butter: 1/2 cup (melted)
  • Eggs: 2 large
  • Vanilla Extract: 1 teaspoon
  • Ground Cinnamon: 1 teaspoon
  • Ground Nutmeg: 1/2 teaspoon
  • Salt: 1/4 teaspoon
  • Unbaked Pie Crust: 1 (9-inch)

Instructions

  1. Preheat your oven to 350°F (175°C) and position the oven rack in the center.
  2. Begin by roasting your sweet potatoes. Allow them to cool, then mash them until smooth.
  3. In a large mixing bowl, combine the mashed sweet potatoes with granulated sugar, brown sugar, melted butter, eggs, evaporated milk, vanilla extract, ground cinnamon, ground nutmeg, and salt. Mix until all ingredients are well incorporated and the filling is smooth.
  4. Roll out your unbaked pie crust and place it into a 9-inch pie dish. Crimp the edges according to your preference.
  5. Pour the sweet potato filling into the crust, smoothing the top with a spatula.
  6. Bake in the preheated oven for 55–60 minutes or until the filling is set and a toothpick inserted in the center comes out clean.
  7. Once done, remove the pie from the oven and allow it to cool on a wire rack for at least 2 hours.
  8. Slice and serve with a dollop of whipped cream or a scoop of vanilla ice cream.
