Description

A delightful dessert combining rich chocolate layers with tangy cherries and whipped cream, perfect for celebrations.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 jar (24 oz) sour cherries, drained
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • Chocolate shavings for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract; beat on medium speed for 2 minutes. Stir in the boiling water (the batter will be thin).
  4. Pour the batter evenly into the prepared pans.
  5. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  6. Cool the cakes in their pans for about 10 minutes, then transfer them to wire racks to cool completely.
  7. While the cakes are cooling, whip the heavy cream with powdered sugar until stiff peaks form.
  8. Once the cakes are cool, place one layer on a serving plate, spread half of the whipped cream over it, and top with half of the cherries.
  9. Place the second cake layer on top, then spread the remaining whipped cream and top with the rest of the cherries.
  10. Garnish with chocolate shavings, slice, and serve!

Notes

Store leftover cake in the refrigerator; best consumed within 3-4 days. For optimal mixing, use room temperature ingredients.
