Description

A delicious twist on the classic BLT sandwich, this salad combines bacon, lettuce, tomatoes, and tender chicken for a quick and tasty meal.


Ingredients

  • 4 cups rotisserie chicken (shredded)
  • 8 strips bacon (chopped, center cut)
  • 1/2 cup plain Greek yogurt
  • 1/3 cup mayonnaise
  • 1 tablespoon ranch seasoning
  • 1/2 tsp freshly cracked pepper
  • 1/3 cup green onions (diced)
  • 2/3 pint grape tomatoes (halved or quartered)
  • 1 avocado (diced)

Instructions

  1. In a large mixing bowl, whisk together the mayonnaise and Greek yogurt, then mix in the ranch seasoning and pepper.
  2. Add the shredded chicken, chopped bacon, and diced green onions to the bowl and mix well.
  3. Carefully fold in the halved grape tomatoes.
  4. Taste the salad and adjust seasonings as needed, then add the diced avocado just before serving.
  5. Store the salad in an airtight container in the fridge for at least 1 hour before serving.

Notes
