- 2 cups full-fat cottage cheese
- 4 eggs
- 4 tbsp sweetener of choice
- 2 tsp vanilla extract
- 2 tbsp cornstarch
- 1 tsp lemon zest
- 1½ cups blueberries, divided
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch dish thoroughly.
- Strain the cottage cheese for 2–3 minutes to remove excess liquid; set aside.
- In a blender, combine strained cottage cheese, eggs, sweetener, vanilla extract, and cornstarch. Blend until smooth.
- Check the texture; it should be creamy. If too thick, add 1 tsp of milk.
- Gently fold in blueberries and lemon zest.
- Pour the mixture into the greased dish and spread it evenly.
- Tap the dish gently on the counter to remove air bubbles.
- Bake for about 35–40 minutes, or until edges are set and a toothpick comes out mostly clean.
- Allow to cool for 10–15 minutes before slicing. Optionally top with extra blueberries.
