A delightful street food sandwich bursting with Indian flavors, featuring spicy green chutney and potato stuffing.
Ingredients

- 1 cup tightly packed coriander leaves (or ½ cup each of mint leaves and coriander leaves)
- ½ teaspoon chaat masala powder
- 1 to 2 green chilies (to taste)
- Salt (as required)
- 1 to 2 teaspoons water (for grinding, optional)
- 3 to 4 medium potatoes (or 1.5 cups mashed potatoes)
- ½ tablespoon oil
- ½ teaspoon mustard seeds
- ½ teaspoon cumin seeds
- 1 or 2 green chilies (finely chopped)
- 8 to 10 curry leaves (kept whole or chopped)
- ¼ teaspoon turmeric powder
- 1 pinch asafoetida (hing)
- ⅓ cup chopped coriander leaves
- Salt (as required)
- 12 slices bread (white, brown, whole wheat, or multi grain)
- 1 medium onion (peeled, rinsed, and thinly sliced)
- 1 medium tomato (rinsed and thinly sliced)
- 1 small capsicum (optional, rinsed and thinly sliced)
- Butter (as required)
- Chaat masala (or sandwich masala as required)
- Roasted cumin powder (optional)
- Black salt (or rock salt as required)
Instructions
- Making Green Chutney: In a blender, combine coriander leaves, chaat masala, green chilies, and salt. Add water if needed. Blend until smooth and set aside.
- Preparing Potato Masala Stuffing: Boil potatoes until soft, peel and mash. In a pan, heat oil and add mustard seeds and cumin seeds. Once spluttered, add green chilies and curry leaves, then turmeric powder, asafoetida, and mashed potatoes. Mix well, add salt and chopped coriander leaves. Cook briefly and remove from heat.
- Assembling Masala Toast Sandwich: Spread green chutney on one slice of bread, layer with potato masala, add onion, tomato, and capsicum (if using). Top with another slice of bread and spread butter on both sides.
- Making Masala Sandwich: Heat a pan or griddle and toast the sandwich until golden brown on both sides, press slightly for a crispier texture. Remove from pan and cut as preferred.
Notes
Serve warm with extra green chutney or tomato ketchup. Sprinkle chaat masala or roasted cumin powder on top for extra flavor.
