- 4 large sweet potatoes
- 1/2 cup brown sugar
- 1/4 cup bourbon
- 1/2 cup milk
- 1/4 cup unsalted butter
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- Salt and pepper to taste
- 1 cup chopped bacon
- 1/2 cup pecans
- 2 tablespoons maple syrup
Instructions
- Preheat your oven to 400°F (200°C).
- In a large pot, boil the sweet potatoes until tender. Peel and mash until smooth.
- In a medium bowl, blend the mashed sweet potatoes with brown sugar, bourbon, milk, unsalted butter, cinnamon, nutmeg, salt, and pepper.
- Pour the sweet potato mixture into a greased baking dish.
- In a skillet, cook the chopped bacon over medium heat until crispy, then add pecans and maple syrup, cooking until the pecans are toasted.
- Sprinkle the bacon and pecan mixture over the sweet potato layer.
- Bake for 25 to 30 minutes or until heated through and slightly caramelized.
