Description

Delightful Breakfast Pancake Poppers that combine the flavors of classic pancakes in a fun, bite-sized format.


Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini muffin pan with cooking spray or butter.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until combined.
  3. In another bowl, whisk the milk, egg, melted butter, and vanilla extract until smooth.
  4. Gradually combine the wet and dry ingredients, stirring gently until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 10–12 minutes, or until golden brown and a toothpick comes out clean.
  7. Let cool slightly in the pan, then transfer to a wire rack. Serve warm with syrup for dipping.

Notes

Don’t overmix to keep the poppers light and fluffy. Experiment with flavors by adding chocolate chips, fruits, or nuts.
