- 1 cup all-purpose flour
- 1 tablespoon granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C) and grease a mini muffin pan with cooking spray or butter.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until combined.
- In another bowl, whisk the milk, egg, melted butter, and vanilla extract until smooth.
- Gradually combine the wet and dry ingredients, stirring gently until just combined.
- Fill each muffin cup about 2/3 full with the batter.
- Bake for 10–12 minutes, or until golden brown and a toothpick comes out clean.
- Let cool slightly in the pan, then transfer to a wire rack. Serve warm with syrup for dipping.
Notes
Don’t overmix to keep the poppers light and fluffy. Experiment with flavors by adding chocolate chips, fruits, or nuts.
