  • 1 pinch flaky sea salt (for salted caramel flavor)
  • 1/2 teaspoon espresso powder (to enhance the brown sugar notes)
  • 1/4 cup finely chopped pecans or walnuts (for texture)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream together the butter, brown sugar, and white sugar until light and fluffy (2-3 minutes).
  3. Beat in the egg and vanilla extract until fully combined.
  4. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Roll the dough into 1-inch balls, place a caramel in the center, and fold the dough around it.
  7. Mix brown sugar and cinnamon; roll each cookie in this mixture and place on the baking sheet.
  8. Sprinkle the tops with remaining white sugar.
  9. Bake for 10-12 minutes or until edges are lightly golden.
  10. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
