Ingredients

Instructions

  1. In a large mixing bowl, beat the softened butter with brown sugar and granulated sugar until light and fluffy.
  2. Add eggs one at a time, mixing thoroughly after each addition. Incorporate vanilla extract and blend until smooth.
  3. In a separate bowl, whisk together flour, baking soda, baking powder, salt, ground cinnamon, and cornstarch until evenly mixed.
  4. Gradually mix the dry ingredients into the creamed butter mixture until just combined. Avoid overmixing.
  5. Cover and chill the dough in the refrigerator for at least 30 minutes.
  6. Chop caramel candies into small pieces. If using firm caramels, soften them with a tablespoon of heavy cream if needed.
  7. Scoop about 2 tablespoons of dough and flatten it into a disk. Place a portion of caramel in the center and fold the dough around it, ensuring the caramel is fully enclosed. Roll gently to shape into a ball. Repeat with the remaining dough.
  8. Preheat the oven to 350°F. Arrange the dough balls onto a parchment-lined baking sheet, leaving space between each one.
  9. Bake for 10 to 12 minutes until the edges are golden and the centers remain soft. Do not overbake.
  10. Allow cookies to cool on the sheet for 5 minutes, then transfer to a wire rack. Optionally, sprinkle with sea salt flakes while still warm for enhanced flavor.

Notes

For extra chewiness, make sure not to overbake the cookies. Use high-quality caramel candies for the best flavor. Feel free to add chocolate chips or nuts for a twist.
