  • 200g Macro Organic original corn chips
  • 2 cooked chicken breast fillets, coarsely shredded
  • 1/2 cup buffalo wings sauce (plus 1 tbsp extra to serve)
  • 1 1/3 cups shredded light tasty cheese
  • 1/2 red onion, thinly sliced
  • 340g Woolworths buffalo style salad kit
  • 1 avocado, deseeded, finely chopped
  • 2 spring onions, thinly sliced

Instructions

  1. Preheat your oven to 200°C (or 180°C for fan-forced).
  2. Line a large baking tray with baking paper to prevent sticking.
  3. Spread the corn chips evenly over the tray to form a thin layer.
  4. In a medium bowl, toss the shredded chicken with buffalo sauce until well-coated.
  5. Scatter half of the shredded cheese over the chips, followed by the chicken mixture, thinly sliced red onion, and the remaining cheese.
  6. Bake the nachos in the preheated oven for about 15 minutes, or until the cheese is golden and melted, and the chips turn a light golden brown.
  7. While the nachos are baking, prepare the salad according to the packet instructions.
  8. Once the nachos are ready, top them with chopped avocado, spring onions, and a drizzle of the extra buffalo sauce.
  9. Serve your Buffalo Chicken Nachos alongside the prepared salad for a delightful combination.
