Ingredients

Scale
  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chopped pecans
  • 1/2 cup cream cheese (softened)
  • 1/4 cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons milk

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. In another bowl, mix together flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chopped pecans.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  10. For the cream cheese icing, beat together the softened cream cheese and butter until smooth.
  11. Gradually add powdered sugar and vanilla extract, mixing until creamy.
  12. Add milk as needed to reach desired consistency.
  13. Once the cake is cool, drizzle or spread the icing over the top. Enjoy!

Notes

Ensure ingredients are at room temperature for best results. Consider toasting pecans for added flavor.
