- 1.5 pounds baby potatoes
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
- 1 teaspoon paprika (optional)
- Lemon wedges for serving
Instructions
- Boil baby potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly.
- In a skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the cooked potatoes to the skillet and toss to coat in the garlic butter.
- Season with salt, pepper, and paprika (if using).
- Garnish with fresh parsley and serve with lemon wedges.
Notes
Best served hot; pairs well with grilled meats or salads. Can be stored in the refrigerator for up to 3 days.
