Description

Delightful rolls featuring a rich buttery flavor and melted mozzarella combined with roasted garlic.


Ingredients

Scale
  • 1 garlic head
  • Sprinkle of salt
  • 30 grams olive oil
  • 50 grams butter (for garlic butter)
  • 1 tablespoon fresh parsley (chopped)
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 25 grams honey
  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 20 grams milk powder (optional)
  • 25 grams butter (for dough)
  • 2 egg yolks
  • 1½ teaspoon salt
  • 1 tablespoon sugar
  • 200 grams mozzarella cheese (shredded)
  • Garlic butter we made previously
  • 1 egg (for egg wash)

Instructions

  1. Roast the garlic head by cutting off the top, drizzling with olive oil, sprinkling with salt, covering with aluminum foil, and roasting at 160°C (320°F) for 2 hours.
  2. Squeeze the roasted garlic cloves into a bowl and mix with softened butter, chopped parsley, and garlic oil to make garlic butter. Set aside.
  3. In a small bowl, combine warm milk, active dry yeast, and honey. Let it proof for about 10 minutes.
  4. In a large mixing bowl, combine all-purpose flour, bread flour, sugar, milk powder, softened butter, salt, egg yolks, and the yeast mixture. Stir until combined.
  5. Knead the dough on medium speed for 15-20 minutes until soft and smooth.
  6. Transfer the dough to a covered bowl and let it proof in a warm place for about 1 hour and 30 minutes or until doubled in size.
  7. Roll out the dough on a floured surface to about 1/4 cm thickness, spread prepared garlic butter on top, and sprinkle shredded mozzarella cheese.
  8. Roll the dough into a log shape and cut it into 6 equal portions.
  9. Place the rolls on a baking sheet, cover, and let them proof for another 30 minutes.
  10. Preheat the oven to 175°C (350°F), brush the rolls with egg wash, and bake for 20-25 minutes.
  11. Once out of the oven, brush with leftover garlic butter and sprinkle with chopped parsley before serving.

Notes

Don’t rush the yeast proofing process for fluffier rolls. Use fresh garlic for better flavor and feel free to experiment with different cheeses.
