- 1 lb andouille sausage
- 4 large potatoes, diced
- 1 cup vegetables (onions, bell peppers, celery)
- 2 tbsp Cajun spices
- 1 cup heavy cream
- 1 cup cheddar cheese, shredded
- 4 cups chicken or vegetable broth
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, cook the andouille sausage over medium heat until browned.
- Add diced potatoes and vegetables to the pot and cook until vegetables are tender.
- Stir in Cajun spices, then add chicken or vegetable broth. Bring to a boil.
- Reduce heat and let simmer for about 15 minutes, until potatoes are cooked through.
- Stir in heavy cream and cheddar cheese, cooking until cheese is melted and the soup is creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with extra cheddar cheese or chopped green onions if desired.
Notes
For a richer flavor, use homemade broth instead of store-bought. Adjust the amount of Cajun spices for your preferred heat level.
