- 4 medium potatoes, diced

- 2 tablespoons Cajun spice blend
- 1 cup heavy cream
- 1 cup cheddar cheese, shredded

- 1/2 teaspoon pepper
- 4 cups broth (chicken or vegetable)
Instructions
- In a large pot, cook the andouille sausage over medium heat until browned.
- Add diced potatoes and mixed vegetables, and cook for a few minutes.
- Stir in the Cajun spice blend.
- Pour in the broth and bring to a boil.
- Reduce heat and simmer until the potatoes are tender.
- Stir in heavy cream and cheddar cheese until melted and combined.
