Description

Ingredients

  • 1 lb andouille sausage
  • 4 medium potatoes, diced
  • 2 cups mixed vegetables (such as carrots, celery, and bell peppers)
  • 2 tablespoons Cajun spice blend
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 cups broth (chicken or vegetable)

Instructions

  1. In a large pot, cook the andouille sausage over medium heat until browned.
