- 2 cups cooked chicken, shredded
- 1 cup andouille sausage, sliced
- 1 cup shrimp, peeled and deveined
- 1 can white beans, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced green chilies
- 2 teaspoons Cajun seasoning
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 tablespoon olive oil
- Chopped green onions for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until onion is translucent.
- Stir in the andouille sausage, cooking until browned.
- Add the shredded chicken, shrimp, white beans, chicken broth, green chilies, Cajun seasoning, and cumin.
- Bring to a simmer and let cook for about 20 minutes.
- Season with salt and pepper to taste.
- Serve warm and garnish with chopped green onions.
