A hearty and delicious Cajun White Chicken Chili featuring juicy chicken, savory sausage, and tender shrimp in a creamy broth, perfect for cozy nights or impressing guests.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup andouille sausage, sliced
  • 1 cup shrimp, peeled and deveined
  • 1 can white beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced green chilies
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped green onions for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until onion is translucent.
  2. Stir in the andouille sausage, cooking until browned.
  3. Add the shredded chicken, shrimp, white beans, chicken broth, green chilies, Cajun seasoning, and cumin.
  4. Bring to a simmer and let cook for about 20 minutes.
  5. Season with salt and pepper to taste.
  6. Serve warm and garnish with chopped green onions.
