Description

A quick and satisfying breakfast option combining cheesy goodness with scrambled eggs and chicken sausage.


Ingredients

  • ½ pound ground chicken breakfast sausage
  • 6 large eggs, beaten
  • 8 slices Colby-Jack cheese
  • 4 tablespoons soft butter, divided
  • 8 slices sourdough bread
  • Optional: tomato slices, spinach, avocado, or mayonnaise

Instructions

  1. Cook the chicken sausage in a skillet over medium heat until browned. Transfer to a bowl lined with paper towel.
  2. In the same skillet, melt 2 tablespoons of butter and scramble the beaten eggs until just set. Mix in the cooked sausage.
  3. Butter one side of each slice of bread. Place one slice, buttered side down, in the skillet, layering with a slice of cheese, the sausage-egg mixture, another slice of cheese, and top with another slice of bread, buttered side up.
  4. Cook the sandwich over medium heat for 3–4 minutes on each side, until golden brown and the cheese is melted.
  5. Remove from skillet and let rest for one minute before slicing. Serve warm.

Notes

For best results, cook on medium heat for even melting of the cheese.
