A quick and satisfying breakfast option combining cheesy goodness with scrambled eggs and chicken sausage.

- ½ pound ground chicken breakfast sausage
- 6 large eggs, beaten
- 8 slices Colby-Jack cheese
- 4 tablespoons soft butter, divided
- 8 slices sourdough bread
- Optional: tomato slices, spinach, avocado, or mayonnaise
Instructions
- Cook the chicken sausage in a skillet over medium heat until browned. Transfer to a bowl lined with paper towel.
- In the same skillet, melt 2 tablespoons of butter and scramble the beaten eggs until just set. Mix in the cooked sausage.
- Butter one side of each slice of bread. Place one slice, buttered side down, in the skillet, layering with a slice of cheese, the sausage-egg mixture, another slice of cheese, and top with another slice of bread, buttered side up.
- Cook the sandwich over medium heat for 3–4 minutes on each side, until golden brown and the cheese is melted.
- Remove from skillet and let rest for one minute before slicing. Serve warm.
Notes
For best results, cook on medium heat for even melting of the cheese.
