Ingredients

  • 2 cups cooked pasta (e.g., elbow macaroni or penne)
  • 2 cups mixed vegetables (e.g., peas, corn, bell peppers)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 cups shredded cheese (e.g., cheddar or mozzarella)
  • 1 cup marinara sauce
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Stir in garlic powder, onion powder, Italian seasoning, salt, and pepper.
  4. In a large bowl, combine the cooked pasta, mixed vegetables, cooked beef, marinara sauce, and half of the cheese.
  5. Transfer the mixture to a greased baking dish and top with the remaining cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Let it cool for a few minutes before serving.

Notes

For a low-carb option, replace the pasta with cauliflower. This casserole can be made ahead of time and refrigerated.
