- 1 pound ground beef
- 0.5 small onion (finely chopped)
- 2 cloves garlic (minced)
- 1 tablespoon taco seasoning
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper
- 1 can diced tomatoes with green chilies (10 oz, drained)
- 4 oz cream cheese (cubed and softened)
- 0.5 cup sour cream
- 1.5 cups shredded cheddar cheese
- 0.5 cup shredded Monterey Jack cheese
- Chopped green onions or cilantro (for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and grease an 8×8 or 9×9-inch baking dish.
- In a large skillet over medium heat, warm the olive oil. Add the ground beef and cook until browned.
- Add the chopped onion and minced garlic, sauté for 2–3 minutes until fragrant.
- Stir in the taco seasoning, salt, and black pepper until combined.
- Lower the heat to low, stir in the diced tomatoes, cream cheese, and sour cream, and mix until combined.
- Spread the beef and cheese mixture in the prepared baking dish.
- Sprinkle the shredded cheddar and Monterey Jack cheese on top.
- Bake for 20–25 minutes, until the cheese is melted and bubbly.
- Let cool for a few minutes and garnish with chopped green onions or cilantro before serving.
Notes
Use lean ground beef for a healthier option. Customize spice levels and cheese types as desired.
