Ingredients

  • 1 pound ground beef
  • 0.5 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon taco seasoning
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 can diced tomatoes with green chilies (10 oz, drained)
  • 4 oz cream cheese (cubed and softened)
  • 0.5 cup sour cream
  • 1.5 cups shredded cheddar cheese
  • 0.5 cup shredded Monterey Jack cheese
  • Chopped green onions or cilantro (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease an 8×8 or 9×9-inch baking dish.
  2. In a large skillet over medium heat, warm the olive oil. Add the ground beef and cook until browned.
  3. Add the chopped onion and minced garlic, sauté for 2–3 minutes until fragrant.
  4. Stir in the taco seasoning, salt, and black pepper until combined.
  5. Lower the heat to low, stir in the diced tomatoes, cream cheese, and sour cream, and mix until combined.
  6. Spread the beef and cheese mixture in the prepared baking dish.
  7. Sprinkle the shredded cheddar and Monterey Jack cheese on top.
  8. Bake for 20–25 minutes, until the cheese is melted and bubbly.
  9. Let cool for a few minutes and garnish with chopped green onions or cilantro before serving.
