Description
This Cheesy One Pot Chicken and Rice with Spinach is a creamy, veggie-packed comfort meal made with wholesome brown rice and juicy chicken. A complete dinner in one skillet!
Ingredients
2 boneless skinless chicken breasts
1/2 onion, diced
2 cloves garlic, minced
1 1/2 cups raw brown rice
3 cups chicken broth
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp dried thyme
4 cups fresh baby spinach, roughly chopped
2 cups sharp cheddar cheese, grated
1 cup sour cream
1 1/2 cups whole wheat breadcrumbs
1 tbsp olive oil
Instructions
1. Cube chicken breasts and cook in olive oil over medium-high heat until golden.
2. Add diced onion and sauté for 5 minutes. Stir in garlic for 30 seconds.
3. Add brown rice, chicken broth, and dried herbs. Cover and simmer for 30 minutes.
4. Roughly chop spinach and stir into skillet. Let it wilt.
5. Stir in cheddar cheese and sour cream until creamy.
6. Flatten the mixture and top with breadcrumbs.
7. Broil 4–7 minutes until golden and crispy on top.
8. Serve hot with salad or fruit on the side.
Notes
Use gluten-free breadcrumbs to make this dish gluten-free.
Roughly chopping spinach helps picky eaters accept the greens.
Reheat in oven to maintain the crispy topping.
