Instructions
- Preheat the oven to 400°F (200°C).
- Wash the baby potatoes and cut them in half.
- In a large bowl, toss the potatoes with olive oil, ranch seasoning, salt, and pepper until evenly coated.
- Spread the potatoes on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes until golden and crispy, stirring halfway through.
- Remove from the oven, sprinkle with shredded cheese, and return to the oven for an additional 5 minutes until the cheese is melted.
- Garnish with fresh chives or parsley before serving.
