A delightful twist on the classic Italian dessert, layering sweet cherries with rich mascarpone and a hint of almondy amaretto.

- 1 cup sweet cherries, pitted and chopped
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1/2 cup espresso, cooled
- 1/4 cup amaretto liqueur
- 12 ladyfinger cookies
- Cocoa powder, for dusting
- Chocolate shavings (optional)
Instructions
- In a bowl, whip the heavy cream with sugar until soft peaks form. Fold in the mascarpone cheese until smooth.
- In a separate bowl, combine the cooled espresso and amaretto.
- Quickly dip each ladyfinger into the espresso mixture and layer them in a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers, then layer half of the chopped cherries on top.
- Repeat the layering process with the remaining ladyfingers, mascarpone mixture, and cherries.
- Cover and refrigerate for at least 240 minutes or overnight.
- Before serving, dust with cocoa powder and add chocolate shavings if desired.
