Description

A charming heart-shaped cake filled with cherries and mixed berries, topped with a smooth cream frosting, perfect for celebrations.


Ingredients

  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, at room temperature
  • 2¼ cups granulated sugar
  • 4 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1 cup sour cream
  • ½ cup whole milk
  • Red gel food coloring (optional)
  • 1 cup cherries, pitted (fresh or frozen)
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • ¼ cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon cornstarch + 2 tablespoons cold water
  • 4 cups powdered sugar
  • 1½ cups unsalted butter, at room temperature
  • 1 teaspoon vanilla extract
  • 34 tablespoons heavy cream
  • White royal icing (for decoration)
  • Fresh berries (optional, for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two heart-shaped cake pans with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. In a large mixing bowl, cream the unsalted butter until soft and fluffy. Gradually add the granulated sugar, continuing to beat until light and airy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Alternate adding the dry flour mixture with sour cream and milk, starting and ending with dry ingredients. Mix until just combined.
  6. If desired, add red gel food coloring. Divide the batter evenly between the prepared pans and bake for 25–30 minutes or until a toothpick inserted comes out clean. Cool completely.
  7. For the Cherry Berry Filling, combine cherries, mixed berries, sugar, and lemon juice in a saucepan. Stir in cornstarch mixed with cold water and simmer until thickened. Allow to cool.
  8. For the frosting, beat unsalted butter until creamy. Gradually add powdered sugar, vanilla extract, and heavy cream. Beat until smooth.
  9. Assemble the cake by placing one layer on a platter, adding Cherry Berry Filling on top, and placing the second layer on top.
  10. Apply a crumb coat and chill for 15 minutes. Frost the outside smoothly and decorate with royal icing and fresh berries if desired.
