Ingredients

  • 1 cup pitted fresh cherries (or frozen cherries, thawed and drained)
  • 1/2 cup all-purpose flour (for topping)
  • 1/3 cup brown sugar (for topping)
  • 1/2 teaspoon ground cinnamon (for topping)
  • 1/4 cup cold unsalted butter, diced (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together the dry ingredients: all-purpose flour, granulated sugar, baking powder, and salt.
  3. Whisk together the wet ingredients: milk, vegetable oil, egg, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and stir until just combined.
  5. Fold in the cherries gently.
  6. Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Mix together the topping ingredients until crumbly.
  8. Sprinkle the cobbler topping over the muffin batter.
  9. Bake for 20–25 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow to cool before serving.
